FRIDAY FEAST : CHEATS CHAI LATTE

This post marks the first of a series of regular weekly themes I intend to introduce here on MBP. Every Friday I like to unwind after a long week at work by indulging in a culinary treat or two. And so I have decided that every Friday I am going to share a favourite recipe with you. I start it off this week with one of my fave treats - and not just on a Friday - a chai latte:



Can you believe I can't get a ready made chai latte in this town?! Neither could I when I moved back here. So there was only one thing to do - make my own. A few experiments later I decided that the easy way also happened to be (in my opinion) the best way. This isn't an exact recipe (I rarely follow recipes properly anyway, much preferring the "go with the flow" style of cooking) so you're gonna have to eyeball a bit, and adjust the amount of spices according to your own taste. But this is roughly how I do it:

I fill a large mug about 2/3 full with skimmed milk. Not only does skimmed milk have less calories (always a bonus!) but it froths better than semi-skimmed or whole milk too. Don't ask me why, it just does. I whack it in the microwave to heat it up, then use a milk frother to beat the heck out of that milk. Oooooo, we love a bit of froth don't we?

While you're nuking the milk, also boil the kettle and get your cafetiere out. Yep, multitasking at its finest here, but make sure to keep an eye on the milk or it will spill over the top in no time. In the cafetiere you put a teabag, or a teaspoon of loose leaf black tea, along with your spices: ground cinnamon, nutmeg, cloves, cardamom and ginger. A good sprinkling of each. A pinch of chili powder if you want a little heat. Also add sugar if you want to sweeten your chai. Then add enough boiling water to fill the remaining 1/3 of the mug and leave to brew until really strong.

Pour the spiced tea into the frothy milk and stir lightly. Sprinkle with cinnamon. Put your feet up and enjoy!

Mmmm that sounds good. We can get it in the supermarket here though (Switzerland) and don't own a cafetiere.

I tried this, with rooibos and some spices, delicious! I used a whisk to froth the milk.
